Cucumber, Cherry Tomato & Feta Salad with Fumami Creamy Mint

Fumami Creamy Mint

(Fermented cashew-based sauce with refreshing mint and herbs)

 

Ingredients (Serves 2–3):

 

  • 1 cup cucumber, sliced or chopped

  • 1 cup cherry tomatoes, halved

  • ½ cup feta cheese, crumbled

  • 2 tbsp red onion, finely sliced (optional)

  • 2–3 tbsp Fumami Creamy Mint sauce

  • 1 tsp lemon juice

  • Salt & freshly ground pepper to taste

  • Fresh mint leaves or microgreens (for garnish)

 

Instructions:

 

1. Prep the veggies:

In a large bowl, combine chopped cucumber, cherry tomatoes, and red onion if using.


2. Add feta:

Crumble in the feta and gently toss.


3. Dress it up:

Add 2–3 tbsp of Fumami Creamy Mint. Mix gently to coat everything evenly. Add a squeeze of lemon juice, salt, and pepper to balance the flavors.


4. Garnish & serve:

Top with fresh mint leaves or microgreens. Serve chilled or at room temperature.

Serving Ideas:

  • Serve as a side with grilled meats, paneer, or falafel.

  • Or spoon onto toasted bread for a refreshing bruschetta-style starter.
