  • Filtered water (enough to fill your container)
  • 1 large glass jar (with a lid)
  • Cheesecloth or clean cloth (to cover during the initial fermentation)
  • Bottles with tight-sealing lids (for secondary fermentation)

Instructions

Step 1: Prepare the Fruit

  1. Choose Your Fruit: Select your favorite fruits. Berries, apples, pears, citrus, and stone fruits all work well. You can use a single type or mix them for a more complex flavor.
  2. Prepare the Fruit: Wash the fruit thoroughly. Cut larger fruits into small pieces, and slightly mash softer fruits like berries or Jamun to release their juices.

Step 2: Start the Fermentation

  1. Combine Fruit and Sugar: Place the fruit in your glass jar and add the sugar. Stir the mixture to coat the fruit in sugar, which will help draw out the juices and feed the yeast and bacteria.
  2. Add Water: Pour enough filtered water into the jar to cover the fruit completely, leaving about 1-2 inches of space at the top.
  3. Cover and Ferment: Cover the jar with cheesecloth or a clean cloth and secure it with a rubber band. Leave the jar at room temperature for 2-4 days. Stir the mixture once a day to prevent mold formation and help with fermentation.

Step 3: Secondary Fermentation

  1. Strain the Liquid: After 2-4 days, strain the fruit out of the liquid using a fine sieve or cheesecloth. The liquid is your base for the fizzy drink.
  2. Bottle the Liquid: Pour the strained liquid into clean, tight-sealing bottles, leaving about an inch of space at the top to allow for carbonation.
  3. Ferment for Fizz: Leave the bottles at room temperature for another 2-3 days to build up carbonation. Be sure to “burp” the bottles once a day (open them slightly to release excess pressure) to prevent them from exploding.

  1. Refrigerate: Once the drink is fizzy to your liking, transfer the bottles to the refrigerator to slow down the fermentation process.
